What to settle before you order
A press is a lever and two flat faces, and the only thing that matters is that the faces stay flat under the arm. Gray iron is heavy enough to do that and cheap enough to live on a counter. The dough goes between two cut sheets of plastic so it lifts off clean.
Keep it dry. Iron rusts, a dishwasher will take the seasoning straight off, and a press that has been left wet overnight will mark the next tortilla. Wipe it, warm it, put it away.
