Set the dough ball on the plate, drop the handle, and the top casting comes down flat. We cast the body from aluminum and put a bearing into the adjustment column so the lever swings smooth. A set of loose gaskets changes the finished round from paper thin to a heavier crust.
Adjustable gasket stack
Four separate gaskets sit around the center pin. Leave them off for thin flatbreads or stack them up when you want thicker dough for arepas, rotis, or small pie crusts.
Bearing in the column
A small bearing inside the main pivot keeps the top plate moving flat against the bottom. The handle turns without grinding metal against metal or binding mid pull.
Parchment sheets required
Keep two squares of parchment or wax patty paper on hand at the counter. Place one sheet under the dough and one on top before pressing to keep the aluminum clean.
Light green casting
The base and handle are cast aluminum with a smooth light green surface finish. It wipes down with a damp cloth after you finish pressing rounds for dinner.
